Sometimes you need a stiff drink to create chemistry on a date, and that’s no more true than at 69 Colebrooke Row. Headed up by cool cocktail-maker Tony Conigliaro, the bar – found down an unassuming side street in Islington – champions molecular gastronomy, with a science lab upstairs and a bar downstairs that makes use of smoke guns, centrifuges and water baths to put its drinks together. Unlike most places that masquerade under the tag, the drinks here are less about the weird and more about the wonderful; the bartender serves them up without much theatre, they have decidedly normal names, and they taste exactly like decadent drinks should – only ten times better. The interiors also ignores glossy smoke and mirrors; Tony’s place keeps it real with shabby-chic furnishings and space for just 40 inside. Hg2 propped up the bar with London’s reigning king of cocktails to go through some of his coolest concoctions – just in time for the party season.
