Using a ISI soda syphon (pictured below), you can do rapid infusions that give an incredible flavour to the alcohol. A technique passed on by Dave Arnold at the FCI, this yields quick and easy results that can easily be replicated at home.
Add 100ml Beefeater 24 gin to a soda syphon with a slice of pink grapefruit peel and two slivers of fresh carrot. Charge the syphon with CO2 from the canister supplied with the ISI syphon kit, then vent the gas (without spraying the liquid out – it helps to invert it!).
Strain the mixture, add 50ml infused gin to a sling glass over cubed ice with 25ml lemon juice and 15ml honey water, stir, then top with soda water and garnish with a slice of grapefrult.
