What’s On The Menu? / Hg2 MUST-EAT

We told you about Austrian-American restaurateur Wolfgang Puck’s first venture in Europe some time ago (read more here), and the suspense has been killing us. Now, we can finally reveal more about the menu at CUT, due to open at the Dorchester Collection’s 45 Park Lane in September. In essence, the restaurant is a copy of the hugely-popular carnivore haven CUT in Beverly Hills. Still, it’s a good thing that there’ll also be a wide range of light starters to kick things off with, such as big eye tuna tartare with wasabi aioli, ginger, Togarashi crisps and Tosa soy, and an array of seafood such as pan-roasted Scottish lobster, so vegetarians need not panic. For a meaty main, take a trip around the world of steak, from dry- and wet-aged beef from the U.S. to grain-fed cuts from the U.K. and Wagyu from Chile, Australia and New Zealand. The special recipe of the seven signature cuts available starts with grilling over hard-wood and charcoal and finishes under a 1,200° broiler for the succulent taste. Then, choose from a multitude of sauces and sides – and after such a tough selection process, you’ll need a bottle of California from the superb list of international wines. But enough with the steak: CUT will also offer classic American and English breakfast and lunch menus, perfect for that early-morning business meeting. Catering to hedonists, breakfast options include blackberry buttermilk pancakes with whipped Bourbon-maple butter or salt beef hash cake with poached eggs, crispy leek and sauce Béarnaise. It looks like we’ll see each other here more than just the once.
